As wonderful as the holidays are, they can be very challenging for those of us who want to keep wearing the same pants in the New Year. Temptations abound (and seeing as it’s a time of celebration), we should be able to indulge our sweet tooth here and there without feeling guilty. We’ve found four recipes for low calorie holiday treats that you can confidently indulge in (or serve) without having to worry about your waistline. These healthy versions of cookies, cheesecake, pie, and eggnog ( yes, eggnog!) will have your friends and family begging for the recipes, especially when you tell them how few calories they are.
Time: 20 min prep + standing, Yields: 18-24 servings, Calories per serving: 38
4 oz dark chocolate candy coating
1/8 to 1/4 tsp peppermint extract
18 to 24 vanilla wafers
Place candy coating and extract in a microwave-safe bowl.
Microwave uncovered on high for 30-60 seconds, stirring every 10-15 seconds until smooth.
Dip wafers in coating and allow excess to drip off.
Place on cookie sheet that is covered in wax paper and let stand until set.
Store in an airtight container.
